Vanilla cupcake with m&m minis

Happy Birthday Laiza! xoxo

I baked these yummy cupcakes last weekend for our birthday girl - super sweet Laiza. This is how the cupcake looks like after frosting it with whip cream (the one you'll find in supermarkets in an aerosol can) and adding the m&m minis on top. Just a reminder, if you want to use the whip cream in can make sure you whip it at your cupcakes just before serving.

Ingredients
1 1/2 cake flour (if you cannot find cake flour you add together 1 tbsp of corn flour to 1 cup of all purpose flour)
1 1/4 tsp of baking powder
1/2 tsp of baking soda
1/2 tsp of salt
1/2 c. plus 1 tbsp. of butter, softened to room temperature
1 c. of sugar
3 large eggs
1 c. of buttermilk (for buttermilk, squeeze half a lemon into a measuring cup then pour in enough whole milk to measure one cup)
1 tsp. of vanilla extract

Procedure
Preheat oven to 180 C

In a bowl, sift together cake flour, baking soda, baking powder and salt.

In a large mixing bowl, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating after each addition. Stir in the vanilla. Add the flour mixture and milk alternately.

Line 12-hole muffin pan with paper cups. Pour in equal amount of batter to each cups. Tap pan lightly to remove air pockets at the bottom

Bake for 20 minutes, allow to cool down before frosting.
