Lemon Garlic Herb Roasted Chicken and Potatoes

We all need comfort food and sometimes my comfort food looks like this.


Not store-bought nor delivered from any restaurants or fast food!

Just a good old nesting roasted chicken - home cooked!

Perfect, golden, plump roast chicken sitting on a bed of exceptional potatoes. Crunchy edges, fluffy middles, and gooey-sauce-soaked-bottoms.

Simple, soulful!

It's lemony-herby-garlicky delicious chicken! It is so flavorful!
To make this chicken roast

You'll need:

1.1-kilo chicken (fresh chicken is better)

1 lemon

2 large potatoes or 10 smaller ones

2 cloves garlic

1 onion

50 grams garlic butter

Dried thyme, sage or oregano

olive oil

salt and pepper

Preheat your oven 190C

Boil your potatoes until it is fork tender. I don't peel my potatoes but I wash them thoroughly with water to remove impurities.

While you're waiting for the potatoes to cook, pop your roasting dish into the oven.

Now prepare your chicken. Make sure to pat it dry with kitchen paper towels

Cut your lemon into quarters, stuff it into the cavity (I only put 2 quarters), followed by two thumb-sized garlic butter, 2 cloves of garlic and two half onion. You can place the stuffing any order you want.

Rub the chicken with your remaining butter all over, sprinkle with generous amount of salt, pepper, and herbs. I used thyme only this time.


Take your roasting pan from the oven, drizzle with olive oil, potatoes in and start crushing them with a fork


Place the chicken on top of the potatoes

I have a small roasting dish and since this has become a hit with my family, I'll get a bigger one soon.

Pause and admire your work!


Place the chicken and potatoes back to the oven and roast for 1.5 hours (more if you have a bigger bird)

The house smell divine as it roasts away in the oven.

To check if your chicken is cooked, cut into the thickest part of the meat if the juices run clear, you're done.



Squeeze remaining half of the lemon directly to the chicken or squeeze it in a small bowl, add soy and chopped chili to make a dipping sauce like the way we Filipinos love our sawsawan.

Serve it with rice or your favorite salad.
