This one-pan dinner is so easy to prepare and so delicious. It goes to the oven for 45 minutes at 180 while you do the rest of the things you wanna do. For instance, I get to feed Bela and do a 20-minute run on the treadmill. Isn't it awesome?! When I am done, dinner is ready.
Before and After
Ingredients
1 kg chicken breast sliced lengthwise
3 red bell pepper deseeded and sliced lengthwise (red, yellow, and, orange) you can also add some green bell pepper if you like (peppers are high in Vitamin C so it is good for you)
1 large red onion sliced in three quarters
1 head of broccoli (optional, I have it so I toss it in there too)
olive oil
Fajita spice mix
2 teaspoons of each spice - cumin, paprika, dried oregano, onion, and garlic powder
1 tsp salt
1/2 pepper
As usual, I didn't add chili and cayenne because of the kids. You can always add it.
Procedure
Line your pan with all the ingredients, liberally splash olive oil on top and then sprinkle it with the spice mix
Put in the oven for 45 minutes at 180 degrees. Check from time to time. It will have some juices at the bottom of the pan, just tilt your pan side to side so the juices go to the veggies. Helps to cook it.
When it is done, mix it, plate it, and serve it with some rice or tortilla.

However, the main difference between fajita and taco is that tacos often have fresh lettuce, tomatoes, and other raw vegetables on top, while fajita ingredients are almost always grilled, including veggies.
